Stacy Ulmer, the charter chef onboard LET’S PLAY TWO, believes that a dinner is more than just a collection of ingredients that have been expertly prepared. It is opportunity to tell a story.
It is impossible for even the most memorable meal you’ve ever had in a restaurant to match the delights you’ll taste while sailing on a boat. Each meal is planned and cooked from scratch according to your every whim and want. Onboard dining is a private affair, unlike at a restaurant where you may have to share the experience with others. It really hits you how crucial good food is when you’re onboard one of our yachts for a week on charter. The best yacht chefs will always be striving to outdo themselves and your expectations with each and every meal they prepare.
Local Ingredients Make All the Difference
“I love to create colorful, fresh and healthy dishes using fresh, seasonal produce from local farmers and connecting with local fishermen and women. I truly enjoy seeing guest faces light up after trying new local fruits, turning young diners onto new dishes and cuisines, and swapping family recipes over a decadent slice of cake. My dishes are heavily inspired from living and traveling throughout the diverse islands of the Caribbean, Latin America and Asia.”

With 15 years of hospitality experience in both fine dining and fast paced casual environments, Stacy wanted to test her skills out on the water and got her Standards of Training Certification and Watchkeeping (STCW) last fall. As part of her STCW and teacher training, Stacy is CPR, First Aid and Basic Firefighting certified. She holds a B.A in Spanish/Latin American Studies as well as a Masters in Education, and is fluent in Spanish. For the past several months, she has enjoyed leading snorkel tours for cruise ship guests from all over the world, learning the ins and outs of sailing catamarans and mixing up tropical rum punches.

Dinner: Korean Inspired Mapù Ragu with Garlicky Rice
Dessert: Chocolate Ganache Cake
